Today’s Featured Wine is: Estate – Rattlesnake Cabernet-Shiraz Cabernet Sauvignon and Shiraz are both two of the world's most widely recognized red wine grape varieties. Both are grown in nearly every major wine producing country in the world; however, both varietals favor the warmer climates. Cabernet Sauvignon became internationally recognized through its prominence in the French Bordeaux wines where it is often blended with Merlot and Cabernet Franc. Like the Cabernet, Shiraz has a long documented history in the Rhône region of Southeastern France as the offspring of the grape varieties Dureza and Mondeuse Blanche. The Dureza is a red grape varietal that has all but disappeared from the vineyards in France. Mondeuse Blanche is a white grape varietal that can still be found in very small amounts in French vineyards today. The Cabernet Sauvignon carries with it very little mystery or debate. In fact, for most of the 20th century, Cabernet was the world's most widely planted red wine varietal until surpassed in the 1990s by Merlot. There are, however, commonly questions asked about the Shiraz (or Syrah) varietal, particularly with regard to the two different names. Many don’t realize, or are reluctant to believe that the two names only refer to one varietal. The varietal is called Syrah in its country of origin, France, as well as in the rest of Europe, Argentina, Chile, New Zealand, Uruguay and most of the United States. The name Shiraz became popular for this grape variety in Australia, South Africa and Canada. The grape is also known by a number of other synonyms used in various parts of the world. It seems that many of the legends of Syrah's origins come from one of its many synonyms - Shiraz. There happens to be a city in Iran called Shiraz, where the famous Shirazi wine was produced. Some legends (and they are believed to be just that – legends) have claimed that the Syrah grape originated in Shiraz, and was brought to the Rhône Valley either by the Phocaeans in 600 BC or by a crusader 1,800 years later. This would make the Syrah name a local French synonym and implies that Shiraz is the proper name of the variety. No documentary evidence exists to back up either legend. The more probable scenario is that the legend connecting Syrah with the city of Shiraz in Iran is of French origin because of a journal entry publish in 1826. The name Shiraz has been used primarily in Australia in modern times; however, in the last 20 years or so, the two names are being used almost interchangeably around the world. There are several very common flavors that are intimately tied to the Cabernet and its viticultural and climate influences. The most widely recognized flavor in the Cabernet is the green bell pepper flavor which occurs most commonly in under-ripened grapes. Two of the other most common flavors in the Cabernet are mint and eucalyptus. Rattlesnake is the ninth federally recognized American Viticultural Area and is located in the Yakima Valley in Washington state. The Rattlesnake Hills encompass the highest point in the Yakima Valley. We think you will love this almost perfect blend of two extremely popular red grape varietals, and might notice a rush of blackberry, plum, cherry and candied orange fragrance. That might be followed by flavors of currant, fig, cedar and spice intertwined with a balance of toasted oaks. This wine pairs nicely with steak, roasted or grilled game, pasta with tomato sauces and pizza.
