Tex Mex Salad with Lima Loca

Tex Mex Salad with Lima Loca

Ingredients:

• 1 can Southwest style black beans & corn

• 1 can tomatoes with chilies

• 1-2 jalapenos, minced

• 4 green onions, chopped

• 1 avocado, cubed

• 1/2 lime, juiced

• 1 tsp. garlic salt

• 1 tsp. coriander

• 1 tsp. chili powder

• 1/4 bunch of cilantro, chopped

• 1 Tbsp. oregano

• 1/4 C. olive oil

Directions:

Step 1: Drain canned goods and add to medium large bowl with jalapenos and green onions.

Step 2: In blender or food processor mix lime juice, salt, coriander, chili powder, cilantro, oregano, and olive oil until vinaigrette is created.

Step 3: Pour dressing in bowl, stir, finish by gently stirring in the avocado.

Step 4: Serve as a salad, add to tacos or burgers, or serve with chips.
