Visit Us on the Web - Click Here Occasionally, grapes are dried on racks, sometimes made of bamboo, or are hung up to dry for several weeks before being made into wine. When the grapes are dried, it reduces the amount of water in the fruit and concentrates the sugar. A higher concentration of sugar in the fruit does not necessarily mean the wine will be sweeter. In fact, the higher sugar content in the dried fruit increase the overall alcohol content of the final product – wine!
